The distinctive feature of Ethiopian coffees lies in their cultivation model.under the forestSince time immemorial, coffee has been cultivated under dense, humid canopies at high altitudes. In contact with numerous other botanical species, coffee trees are naturally protected from harsh weather and receive the nutrients necessary for the proper development of the cherries, without the need for pesticides.

Thanks to this biodiversity, nearly95%Ethiopian coffees are organic (but only a handful of them can afford the certification).

Perched at2,200 mAt its high altitude, Gara Sole produces exceptional batches of washed, natural, and other method coffee. Built by Testi Coffee in 2021 as a premium facility, the washing station's location was chosen for its natural advantages: its high altitude, the characteristics of the surrounding region, and access to pure, fresh water. By selecting a site with optimal growing conditions and ensuring fair compensation for expertly harvested cherries, Testi guarantees exceptional quality, resulting in remarkable complexity and distinction in every cup.

Nm - Producer

Mr. Faysel Abdosh, owner ofTesti CoffeeHe was born in Harar, in eastern Ethiopia, where his father owned a coffee plantation. He grew up in the region ofBench Maji, an important coffee-producing region, which explains his choice to focus on this market.

In high school, he bought coffee directly from producers – ten or twenty kilos – which he then resold to exporters. He was still making a living from this 15 years ago, and that's ultimately how it all started.

EndemicEthiopia naturally boasts an incredible diversity of Arabica varieties, not always precisely identified. They are sometimes called "Heirloom" or "Landrace," which ultimately matters little if the quality of the cup is there.

Nm - Treatment process

This is the processnatural(or dry route) The coffee cherries are not pulped before drying. The bean therefore dries with its fermenting pulp, giving it more...sweetnessandbody.

More specifically for this batch,95% fully ripe cherries0% overripe cherries and 5% semi-ripe cherries were selected. The cherries were then immersed in a tank of water to eliminate any quakers.

The cherries are dried on raised beds. 125 kg of cherries are placed on each bed in as thin a layer as possible. The raised beds are set up in a well-ventilated, shaded area to preserve the integrity of the cherries throughout the drying process.
