On May 1, 2024, we received the keys to 12 rue des Capucins, in the heart of the slopes of Croix Rousse in Lyon, an avant-garde neighborhood where life is good.

After 7 months of extensive work, we were able to open a multi-purpose venue in December 2024.

Roasting

The primary purpose of the location is to allow us to roast coffee as close as possible to most of our customers.

Packaging

An inherent activity in coffee production is that once the beans are roasted, they must be packaged in different formats adapted to customers and cafes.

Storage

One parameter not to be underestimated is that specialty coffee is a fragile commodity, whether in its green or roasted form.

Tasting

The roaster's main tool is their palate. We must taste our coffees every day: shortly after roasting to ensure their quality, and then observe how they evolve over time, according to the different extraction methods and recipes.

Cupping tasting (image opposite) also allows us to select future coffees.
