Nm - Terroir
The region ofQuindiois located in the center of Colombia, between1200m and 1800maltitude. The coffee-growing areas are located on volcanic soil, on steep slopes, making production difficult.
The trade-off? A terroir conducive to growing specialty coffee, for a perfect balance in the cup, between sweetness and vibrant acidity.

Santiago Patiñotook over the family farm a few years agoEl Ocaso(near Salento).
After dropping out of school, his father refused to hire him on the farm. So he began his coffee training in the United States, learning roasting and coffee shop management. Obsessed with the idea of running his own coffee shop and controlling the entire process, from production to the cup, he knocked on El Ocaso's door again. This time, he arrived with his newly acquired skills and a new project in mind: opening a roastery and café on the farm.

Nf - Varieties
This micro-lot is made up of 100%Caturron:a rare variety resulting from a mutation of Caturra, first discovered in Acevedo, Huila.
Growers initially began planting Caturron because of its resistance to leaf rust and high yield (15-20% above average).
It was only very recently that they did further research and discovered that this variety could produce aexotic cup profileunique.

Nm - Treatment process
This is the processnatural anaerobic.
The cherries were hand-picked to remove any visible defects and select the ripest berries. The cherries were then fermented for40 hoursin an anaerobic (airless) environment. Then the cherries are dried in the sun until they reach the optimal moisture content. Once dry, they are pulped to remove the husk and keep only the green berries.
