Nm - Terroir

El Paseo is located in the area ofNariño.This is a beautiful farm on the slopes overlooking the valley ofBuesaco, whose altitude varies between 1750 and 1950 meters, with coffee trees growing in the shade of native trees.

Nm - Producer

Huver Castillorepresents the 3rd generation in family coffee production.
His close relationship with coffee, however, is quite recent. Until a few years ago (before 2015), he was a mathematics teacher at a school in Nariño.

The exploitationEl Paseois located near Buesaco, on the Suma Paz Trail. It was on this family farm that Huver had the opportunity to work alongside his father. El Paseo is one of three farms that Huver's family owns and has been producing coffee for over 20 years.

Nf - Varieties

THECaturrais a natural mutation of Bourbon, more disease resistant and with slightly higher yields. It is a high-altitude coffee tree, particularly appreciated for its sweetness/acidity balance.

Nm - Treatment process

This is a process that is not very widespread inanaerobic honey(or semi-washed way).

The process begins with fermentation60-hour aerobicsinto a concrete vat, where cherries that do not meet quality standards are discarded. Then the coffee is pulped and transferred intoanaerobic steel tanks,where the pH is monitored daily to ensure optimal fermentation conditions.

Huver explains that the coffee is ready when the pH is close to 4.5. At this point, he adds a mixture oflactic acid bacteria, made from cooked sugar cane and passion fruit. This technique will allow the development of a specific fermentation profile that Huver has perfected over the past four years.

After fermentation, the coffee issun-dried for 20 dayson average.
