Nm - Terroir

Head south on the Addis Ababa-Moyale highway, through the mountainous Yirgacheffe region, and you'll finally arrive in the bustling little town of Bule Hora. From Bule Hora, much older, muddy, and winding roads will take you to the rolling hills and green fields of the district ofKercha.

It is in this fertile region thatTsegay Hagos Tesfaye,Sasaba's founder and owner, established his two washing stations. They are equipped with a large pulper and more than 600 African drying beds.

Sasaba processes coffee from over 500 producers, who own their land at over 2,000 meters.

Nm - Producer

Tsegaye Hagos Tesfaye, the founder of Sasaba, works with a multitude of small farmers, whose lands are located between Gédéo and Guji.

Their coffees grow on the hillsides around Sasaba, in the shade of forest trees and trees planted by farmers, such as enset (a close cousin of the banana tree).

Tsegayeprovides regular training to farmers to improve coffee quality and pays bonuses when the quality is exceptional.

Nf - Varieties

The Ethiopian coffee varietyHeirloomis one of the most precious jewels in the coffee world. Grown at high altitudes in the mountainous regions of Ethiopia, this variety is a true treasure with complex and deep aromas.
What makes the Ethiopian Heirloom variety unique is its wild, unhybridized nature. These coffees are grown by local farmers using traditional practices passed down through generations. The absence of artificial hybridization means that each plant is a blend of indigenous varieties, giving the coffee extraordinary genetic diversity.

Nm - Treatment process

When we talk about the coffee processing process, this brings us to post-production: after the coffee cherries have been picked, the cooperative has a choice: leave the cherry pulp or remove it before drying.

On this coffee, the process"washed"involves the cherries being mechanically pulped and then fermented in water for 48 to 72 hours before removing the remaining skin.

The grains are then placed on drying beds for 7 to 8 days to reach a humidity level of between 10 and 12%.
