A primeur Sencha of the zairai* botanical variety, cultivated using natural farming** on a small farm in eastern Kyoto. Fresh and floral, very flexible in its brewing parameters and excellent value for money; it has all the makings of a perfect everyday green tea.

A supple sencha with a silky liquor that can even be brewed piping hot without experiencing any bitterness. Subtle notes of fish flesh quickly give way to more fruity and floral notes, punctuated by a lovely, fresh finish that quickly calls for the next infusion. And we can go for it, because this tea lends itself readily to multiple infusions, regardless of the volume of water or the infusion temperature.

*The botanical variety Zairai refers to tea plants that are propagated by seed, not hybridized like the overwhelming majority of Japanese tea plants. There is no standardization of cultivation and taste here; these tea plants all have their own character that will evolve naturally over time depending on the terroir and natural hazards.

**In natural agriculture, we do not use any fertilizer (not even “organic”) and of course no phytosanitary products. We assume that tea plants need time to draw minerals and nutrients from the soil, to form good roots and to develop at their own pace to become robust and offer leaves with a greater flavor richness.

A little word about Kancha

The Kancha philosophy, between perfectionism and strong convictions, rang particularly true to our ears.

And the teas are particularly precise for our palates.

At Kancha you will find the quintessence of teas from all horizons, mostly organic and natural, but without dogma, because, ultimately, it is above all about emotions that no label can transcribe.
