Camino Verde is much more than just a cocoa fermentation center located in Durán, near Guayaquil, Ecuador. It's a place where passion, science, and respect for producers converge to create exceptional cocoa. Thanks to its rigorous approach and fermentation expertise, the Camino Verde team brings to life beans with unique, complex, and refined aromatic profiles.
At the origin of this project is Vicente Norero, a recognized expert in the field. His goal: to reveal the hidden potential of beans, even those from less valued harvests. By relying on scientific fermentation methods, he manages to enhance the taste of cocoa while respecting its origin and local know-how.

A quick word about Diggers
Cocoa roasting is still a rare profession in France. The vast majority of chocolatiers buy ready-made chocolate and then create recipes and creations. Olivier and Maxence wanted to focus on the raw material, selecting the beans at the source, then roasting them and putting them through all the necessary steps to make a chocolate bar.
This craft is often called "bean-to-bar" and only concerns a tiny proportion of the chocolates sold in France.
It’s a real tasting experience, similar to what we offer with our specialty coffees.
